At Empire Valley we offer a variety of vegetables and produce, here are some recipes that we recommend trying with some of our delicious food.

Summer Salad

Ingredient(s): 1 Medium head of cauliflower, 1 Medium bunch of broccoli, 1 Medium red onion (chopped finely), 1 Cup of grated cheddar cheese (or parmesan), 1/2 Cup of bacon bits (Or more, depending on your taste), 1 Cup of Miracle Whip (low fat), 1 Tbsp of dijor mustard.

Instructions: Toss cauliflower, broccoli, cheese and bacon in a bowl. Pour dressing/mustard mixture over salad to coat and refigerate.

Roasted Garlic Scapes

Instructions: Put scapes in lightly oiled roasting poan. Top with Kosher or seasalt. Put covered pan in hot oven at 425 degrees for 30 to 45 minutes, or until they begin to turn brown. Serve as a side dish. Tastes like roasted garlic but creamier. It is also good drizzled with a light cheese sauce.

Empire Valley's Salsa

Ingredient(s): 8 c tomatoes, 4 c sweet banana peppers, 2 c onions, 1 c sweet red peppers, 1/2 to 1 c jalapeno peppers, 4 cloves garlic, 5.5 oz can tomato paste, 3 tbsp sugar, 1 tbsp salt, 2 tsp paprika, 1 tsp oregano, 1 tsp cilantro, 1/2 c pickling vinegar, 1 c vinegar.

Instructions: Bring tomatoes to a boil and add all ingredients except vinegar. Simmer for 2 hours, adding the vinegar for the last 15 minutes.

Garlic Scape Pesto

Ingredient(s): 1 cup grated parmesan cheese, 3 tbsp fresh lime or lemon juice, 1/4 lb garlic scapes, 1/2 cup olive oil, salt to taste.

Instructions: Pour scapes and olive oil in food processor until smooth. Stir in lemon or lime juice, add parmesan cheese and season to taste.

Tomatillo Salsa

Ingredient(s): 8 to 10 medium sized tomatillos; 1/3 medium white onion, hot peppers to taste (approximately 2), salt and lime to taste, 1/2 cup fresh cilantro (optional), 1/2 avocado (optional).

Instructions: Remove the outer husk and wash tomatillos. Bring them to a boil in a large pot with onions and peppers. Boil until tomatillos change colour and get a bit soft. Put everything in food processor, along with cilantro and salt, and pulse until you achieve a smooth texture (but don't over-blend!). Add lime to taste. If you prefer a creamier salsa, throw in avocado when blending the mixture.
